We refuse to turn on the oven in the summer, and that's why we took our favorite Key Lime Pie and turned it into mini frozen pies. These no-bake treats get covered in chocolate and topped with more zest to get that punch of key lime flavor.

Ingredients

c.
finely crushed graham crackers

tbsp.
granulated sugar

melted butter
For the filling
1 1/2
(8-oz.) blocks cream cheese, softened
3/4

sweetened condensed milk

c.
key lime juice

key lime zest

pure vanilla extract
For the topping

chocolate chips

coconut oil

Directions
- Line a mini muffin tin with liners. In a large bowl, combine crushed graham crackers, sugar, and melted butter. Pack about 1/2 a teaspoon of crust into each liner.
- In a large bowl using a hand mixer, beat cream cheese until smooth. Add sweetened condensed milk, key lime juice, zest, and vanilla and beat until incorporated.
- Divide mixture evenly between liners. Freeze until solid, at least 2 hours and up to overnight.
- Remove key lime pies from liners and place on a baking sheet.
- In a medium heat-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, until melted. In a small bowl, combine crushed graham crackers and zest.
- Spoon chocolate over each key lime pie and top with graham cracker mixture. Freeze until chocolate is hardened, 30 minutes.
